Ingredients

Ground beef. Any blend of ground beef work here, I usually get an 80-20 blend. You can also use ground turkey.
Sausage. A roll of Jimmy Dean ground pork sausage works perfectly. You can use any kind of mild sausage or spicy sausage you like. Turkey sausage will work, too.
Taco seasoning. One packet of store-bought taco seasoning, or 3 tablespoons of my homemade taco seasoning recipe adds so much flavor to this delicious dip.
Cream cheese. One block of cream cheese makes this gooey sausage cream cheese dip recipe even creamier.
Velveeta. One pound of Velveeta makes this cheesy dip super smooth and creamy.
Rotel tomatoes. Ro-tel tomatoes are canned diced tomatoes with green chilies. It comes in a few varieties: mild, fire roasted, or original rotel -- any of them will work perfectly. I use fire roasted.
Optional toppings. Diced tomatoes and sliced green onions add freshness and also look pretty :).
Recipe Variations
There are many ways you can customize your Rotel dip to your family's tastes.
Meat. Use all ground beef or all sausage.
No meat. Skip the meat and add black beans and/or refried beans.
Chiles. Add more green chiles or diced jalapenos.
Seasonings. Instead of taco seasoning, add garlic powder, cumin, chili powder, cayenne pepper, or whatever seasonings you love.
Salsa. No rotel? That's okay, you can use chunky salsa, too!
Toppings. Top your Rotel sausage dip with fresh jalapeno slices, diced red onions, avocado, cilantro or fresh parsley.
How to Make Rotel Dip with Sausage
1. Brown the sausage and ground beef with taco seasoning.
In a large skillet, brown the ground beef and sausage over medium-high heat until no longer pink. Drain off the excess grease.
Add the taco seasoning and ½ cup of water. Reduce to a simmer until the liquid has evaporated.
2. Add the Velveeta, cream cheese, and Rotel.
Cube the Velveeta and cream cheese for faster melting and add them to the skillet.
Pour in both cans of Rotel, undrained.
3. Heat and stir until melted and creamy.
Cook on medium-low to medium until melted and warmed through.
4. Serve, enjoy, repeat.
Keep warm on the stovetop or in a small crock pot on warm setting. Stir occasionally to keep a skin from developing on top.
Serve with chips, veggies, and crackers.
As it cools, it will thicken. If desired, add a splash or two of milk to thin it out.
Reheat
Reheat Rotel dip in the slow cooker, microwave, or on the stovetop on low heat.
Storage & Freezing
Store leftovers in an airtight container in the refrigerator for 3-4 days.
You can also freeze leftover Rotel sausage dip in a freezer-safe container for 1-2 months. Thaw in the refrigerator.
Rotel Dip Crock Pot Instructions
This creamy sausage dip is really easy to make in the slow cooker.
1. Brown and drain the sausage and ground beef as instructed. Add the taco seasoning and water and simmer until the water has evaporated.
2. Place the browned sausage and ground beef mixture into a slow cooker.
3. Add the cubed Velveeta, cream cheese, and rotel tomatoes and stir. Heat on low for 2 hours, stirring occasionally.
4. Reduce heat to warm and serve.
Expert Tips
Do not drain the Ro-tel tomatoes.
Cube the Velveeta and cream cheese for faster melting.
As the dip cools, it will thicken, so it's best to serve it warm. Keep it warm on the stovetop or in a small crock pot.
